Satisfy your cravings with Marini’s on 57’s Tagliolini, a house-made pasta tossed in a 32-month aged Parmesan cheese wheel, served with Alba’s white truffles at your table. Indulge your palate this season with the creamy textured delicacy and fall in love with its rich decadence.

Pappardelle Al Tartufo – Savour The Truffle Dream
Since white truffle is one of the most exquisite ingredients you can find on the market, it is good sense to not diminish its remarkable taste with foods that are too rich in flavour. Pasta is the ideal pairing because of its neutral and light flavour.
Ingredients for 4 people:
- Pappardelle, 300 g
- 1 white truffle
- Nutmeg
- Butter
- Parmesan
Preparation:
Before starting your culinary adventure as a chef, take some time to wash the truffle under running water, using a medium-bristled toothbrush to remove any soil.
Boil the water in a pot and, meanwhile, shave the truffle in ultra-thin cuts. Break the butter into small pieces and place it into a second pot, adding 1/3 of the shaved truffle to it. Cook the pasta and, when it is ready, place it into the second pot with the butter and the truffle. Then, add another 1/3 of the shaved truffle, a pinch of nutmeg and stir until the butter melts.
Prepare your dish, garnishing it with the remaining 1/3 of shaved truffle, seasoning it with Parmesan, and indulge in a squall of unimaginable refinement.
